Complex
Those two words are equally applicable to describe a bowl of pho.
Simple because of the heartfelt warmth.
Complex because of the complicated process.
Those are what I look for from a bowl of pho.
So here I am, sitting in front of this lovely bowl of pho at Madame Vo on a Friday night out ;)
Have always put a pin of the restaurant on my google map, finally got to try it.
Gotta go big!

It just looks visually stunning. The green cilantro and scallions mingle with the purple onion slices covering up the hidden slices of thinly sliced beef. And of course, the RIBBBBB~
What hits me next is the fragrant spices, especially coriander and cloves with a cinnamon undertone. (Perhaps the chef the spices to bring out the fragrance)
One sip, the warmth spreads all over my body from the bottom up. A great soup base. And that is why I come for a pho.
The soup is rich in flavor and semi-translucent looking.
The thin rice noodle is springy and the sliced beef is tender.
I’m surprised by the bouncy beef balls, but even more joyful when bite into the beef rib.
The rib is tender and slightly chewy. The more I chew on it the more flavor comes out, it’s like a magic fountain XD
Did I forget to mention other regular preferential ingredients like bean sprouts, jalapeño peppers, Thai basil, lemon, hoisin sauce, and sriracha?
No, I did not. But they are just average freshness so nothing too exciting.
I loved this bowl of pho and will definitely come back for it, just for the rib and the soup ;)
